There is no shortage of things to do with your corn when you are finished with it. Corn comes in a myriad of varieties. Most widely known varieties of corn, the most valuable one being dent corn or field corn which is primarily used as cattle feed, sweet corn that is often sold on road side stands and of course the most loved corn- popcorn.

Fresh sweet corn on the cob is one of lifes great pleasures. It is important to remember that corn starts converting its sugars into starch right after being harvested. The best way eat corn is just to eat it on the cob. Simply unwrap it, boil it, and eat it. Put lots of butter on it. You can roast it on the grill to make it really savory. Moreover, sweet corn can also be eaten uncooked if the ear is plucked before it is fully mature.

Corn can also be used to make flour for cooking. Corn flour was used by the Native Americans to make many corn based products and is what is used in tortillas and taco shells. Corn is ground into a fine consistency. Sometimes this corn flour serves as a thickening agent in an array of delectable food dishes. Corn is also put to use for making really good sauces, cakes, puddings, sweets and desserts because the starch acts as a thickening agent.

Additionally, corn is also a staple cereal, second to rice and wheat. It helps to produce a number of essential industrial products as well. The main ingredient in corn which is starch, when dried can be used to convert into dextrin or can even be put to use in its present state. In case, it is not dried, it can be processed into sugars and syrups. Oil, which is extracted from the corn seed is used in the manufacture of soap and glycerin and if refined in extreme conditions, can serve the purpose as a salad oil or can used for cooking purposes as well. You will find corn starch and corn syrup in all the food products on the shelf. Corn is cheap so it is used in everything, which is not always good.

Corn is also an outstanding feed for livestock attributing to its benefits of high in energy, easily digestible and low in fiber features. The corn crop can be either cut green after it is harvested or dried for fodder to be given to farm animals. You can give cows or pigs corn for food to feed them and fatten them up. It is a cheap feed too and a lot easier way to feed many cows than having them all graze in a field.

If you are struggling with a corn allergy or think you may be allergic, it’s important to know the corn allergy foods to avoid. Corn and corn derivatives have found their way into nearly every packaged food. Go down any aisle at your local grocery store and look at the labels on the packages. From soups to yogurts to cheese and crackers, you may be surprised to find that most packaged foods contain some kind of corn. Even most breads contain high fructose corn syrup as a sweetener.

What this boils down to is some of our most favorite foods such as chips, soda, most fast food, cereal, bread, and cheese all contain some kind of corn. Most meat is corn fed, or finished with corn, or broth is added to chicken that contains some kind of corn. For those with very severe allergies, the list of corn allergy foods to avoid is quite long.While symptoms vary from person to person, many report inflammation, runny or stuffy nose, hives, skin rashes, difficulty breathing, and IBS type symptoms when ingesting corn. Some cannot even use soaps, creams or shampoo unless they are corn free.

If you believe you are allergic to corn and would like to learn for sure, you can get tested by an allergist. You can also eliminate corn in all its forms from your diet to see if symptoms improve. Eliminating corn from one’s diet takes a fair amount of planning. Cooking everything from scratch or eating simple, whole foods one at a time is one of the easiest ways to learn if you are allergic to corn. For best results, plan menus for one week that are completely corn free and keep a food diary of everything you’ve eaten and how you feel after eating it.

Corn – the Root of All Evil?

I recently listened to an interesting conversation related to corn. It was more a debate on corns’ status as a vegetable, lack of nutritional value, and link to health problems (specifically diabetes and obesity). It was proposed that corn should be banned from production. The debate went on to suggest a comparison between corn and tobacco production and their similar impact on our society. Now, I am hoping some of this was argument just for arguments sake. What did this little yellow kernel ever do? I am stepping up in its’ defense.

Vegetable

If you want to delve into botany, you could argue that corn is a grain; but I am not going to go into that explanation. In our society, corn is eaten like a vegetable. Granted it is a starchy vegetable, but a vegetable nonetheless. As far as nutritional value, ½ cup of frozen corn contributes some Vitamin A and potassium, 2 g of dietary fiber, 2.5 g of protein, only 1.5 g of sugar and less than 0.5 g of fat. The nutritional value is not outstanding, but not terrible either.

Resistant Starch

Corn is a whole grain and includes resistant starch. Resistant starches are popping up as a hot topic related to weight loss. A resistant starch is a type of fiber that resists digestion and passes through the small intestine to the large intestine mostly intact. In the large intestine it ferments and produces a fatty acid (bytyrate) that reduces toxins and helps protect against digestive diseases. Resistant starches boost immunity, improve blood sugar control, and increase satiety (a plus for individuals trying to lose weight).

Cornmeal, Corn Starch, Popcorn, High Fructose Corn Syrup

Corn is used in the production of many products. I am going to briefly cover just a couple – cornmeal, cornstarch, popcorn, and high fructose corn syrup – none of which are vegetables.

Cornmeal versus cornstarch is comparable to whole wheat flour versus white flour. Cornmeal includes the whole corn grain (bran, germ, and endosperm) while cornstarch is refined (bran and germ removed). Whole grain equals a good source of dietary fiber.

Popcorn is an excellent snack that is low calorie. Of course, you need to watch the added butter and salt. One cup of light popcorn equals ~15 calories and provides 5 g of dietary fiber!

High fructose corn syrup is a major ingredient in soda and numerous foods with a low nutritional value. To produce high fructose corn syrup, whole corn is refined to corn starch. This corn starch is then processed with enzymes to yield a glucose and fructose mixture, eventually resulting in the production of high fructose corn syrup. To say that high fructose corn syrup is corn is like saying Sunny Delight is orange juice.

Glycemic Index

The glycemic index is an oft times used rationale supporting the argument that corn is bad, based on how quickly corn raises blood sugar levels. It has been well-known for years that the glycemic index is not a reliable tool. If you were to base eating on the glycemic index, that would mean you sit down for your evening meal and dine on a cup of corn only. How likely is that? A typical meal includes a variety of foods, such as some meat and bread, along with corn. The protein, fiber, and other components of these various foods, negate the glycemic index value established for corn alone.

Portion Control

I sincerely doubt someone is overweight because they couldn’t put down the corn. Corn does provide ~80 calories per half cup, so as with everything else, you need to practice portion control and watch what you add. A tablespoon of butter added to a half cup of corn increases the calorie count to ~180 calories.

Bottom Line:

If you like corn, eat it. You do receive a nutritious vegetable, but watch the amount. Definitely NOT the root of all evil!

Corn is popular because of delicious to serve for varieties menu. You can find corn at every country worldwide, although corn comes from Peru, Equador, Bolivia and South Mexico. 1.Pop Corn

www.shcri.com – Chinaâs corn export volume represented a year-on-year slip of 93 percent to 1,874 tons in April, 2009. From January to April, 2009, the corn export volume declined year on year by 89 percent to 12,347 tons.

Since October, 2008, Chinese government has planned to reserve 40 million tons corn in northeast areas, making up 25 percent of the total corn output. This measure heightens the corn price, which on one hand protects the farmersâ benefits and on the other hand throws the corn processing industry into a crisis.

Affected by the financial crisis, corn processing industry suffers flat sales. Once the corn price goes up, the cost of processing enterprises also increases and thus profit drops again.

Take Huarun Cerestar Maize Industry Co., LTD for example. From January to July in 2008, the companyâs total profit amounted to RMB 15 million but began to drop by RMB 3 million to RMB 7 million per month from August. The total loss of the second half of 2008 reached RMB 30 million, equal to the normal annual profit.

The annual corn starch production capacity of COFCO Bio-chemical Energy (Yushu) CO., LTD amounted to 400,000 tons. But from October 2008, the company suffered a loss of RMB 200 to RMB 350 per ton. Although enterprises were reserving corn continuously, the corn inventory decreased by 50 plus percent from that of 2007. Due to the reverse corn prices in northeast areas and central plain areas, the corn starch was mainly sold to pearl delta regions which were attacked severely by the big gap in prices. After October 2008, the starch price showed a monthly slip of RMB 50 to RMB 100. The total loss of Q4, 2008 exceeded RMB 20 million.

Under the gloomy macroeconomic situation, the structure of demand and supply of corn still remained loose. Although the government helped reserve part of corn, the stagnancy of corn-processing industry and breeding industry also led to the oversupply of corn. Moreover, the H1N1 epidemic emerging recently added difficulties to corn sales.

The price of domestic corn in northeast areas remains high at present while the soybean price stays low, which gives rise to the situation that some northeast farmers switch from soy bean to corn. In 2009, farmers in China are active in planting crop, such as rice and corn, but it is predicted that the area of soy bean in Jilin province will be less because part of soy beans have been replaced by corn. As a result, there is no doubt that the supply of corn will exceed its actual demand. Chinaâs corn output in 2008 amounted to about 156 million tons and the sales just reached 133 million tons, with surplus of 23 million tons.

Because of the governmentâs policy of temporarily reserving corn, the domestic corn price has been apparently higher than international corn price since early 2009. Although Chinese government cancelled the export tariff of corn on December 1st, 2008, there was still a big gap between domestic price and international price, which made Chinaâs corn export hard to fulfill. From January to March of 2009, Chinaâs total corn export volume decreased year on year by 83.45 percent. Exports to Taiwan reached 6285 tons, with 4162 tons to North Korea and 26 tons to Japan. But from January 2nd, 2009 to April 2nd, 2009, Japanâs corn imports from USA amounted to 4.1284 million tons, a year-on-year slip of 205,300 tons. The transportation fare from China to Japan was much lower than that from USA to Japan while the total price of Chinaâs corn export was higher than that of USA.

In December 2008, Chinese government decided to reserve 40 million tons corn in northeast areas and the actual reserve volume reached 35.1769 million tons, making up 87.94 percent of the planned amount, according to the statistics by April 25th, 2009. It is predicted that the actual reserve volume this time would reached 35.5 million tons, accounting for about 66 percent of the total corn output of northeast areas and about 34 percent of Chinaâs corn output. These data show that Chinaâs corn price will be wholly under control of Chinese government.

As the corn reserve ends, people have switched their attention to whether Chinese government will successfully sell those reserved corn. Related government officials have declared several times that the reserved corn will be sold at the cost price on wholesale market. Calculating the reserve price in 2008 plus the purchase price, parching price and transportation fare, the sales price of corn may reach RMB 1600/ton and the knockdown price will exceed RMB 1800/ton. Perhaps it is hard for corn-processing enterprises and feed enterprises to accept such a high price.

Noticing the cornâs price advantage in North China, many enterprises in south areas switch to corn in North China, which leads to the state that the sales price in south is lower than that of northeast areas. At present, the CIF price of American corn to Guangzhou is RMB 1500/ton while the CIF price of northeast corn to Guangzhou exceeds RMB 1800/ton, which makes corn in northeast areas hard to sell. In addition, if the starch enterprises or alcohol enterprises purchase corn at RMB 1800/ton, they will suffer a loss of RMB 700/ton to RMB 800/ton of their products. Thus, corn sales cannot rely on the corn-processing industry. It can be implied that the gloomy corn consumption will not clear up soon and it is also difficult for Chinese government to sell those reserved corn at cost price.

Corn acreage in Chinaâs major production areas will continue to increase in 2009, and corn is expected to harvest if there is no severe disaster in future.

At present, stocks for corn in northeast areas are insufficient, especially in Jilin and Heilongjiang. For example, more than 10 million tons corn in Jilin are stored in open-air places.

Â

Chinaâs corn stocks are abundant currently and the stock pressure of northeast crop will see a substantial increase after the autumn grain crops pour into market in 2009.
